Creamy Avocado Cucumber Tomato Salad

I believe the key to happiness is eating a good salad!

Yes…the key to happiness is found inside a big bowl of salad…who can be unhappy while eating fresh greens, cucumbers, tomatoes, avocados, beans, nuts, and creamy dressings!

I just listed some of my favorite salad toppings. 

When I say salad, I am not talking about one of those chunky hard salads where they forgot to take the core out the lettuce. A great salad to me represents a person taking the time and care to create salad goodness!

I’ve spent upwards of an hour creating some of my salads, because I want everything perfect. I will hand tear my lettuces sometimes, especially when I am using lettuces out of my garden.

I also take the time to seed my tomatoes and cucumbers because the seeds make the salad taste bitter and it also waters down my salad dressings, which I don’t want.

Don’t worry, today’s salad is a quick one, you just take cucumbers, don’t forget to peel them if you’re not using organic ones.

Next, I seeded my cucumbers, added avocado and some sliced grape tomatoes. Made a quick Asian based vinaigrette, tossed everything together and that was it!

This is my daughters favorite salad, and it’s also the quickest salad that I make. You can serve it chilled and/or room temperature.

Creamy Avocado Cucumber Tomato Salad

Prep Time: 5 minutes
Servings: 2

Ingredients:

3 cucumbers, seeded, peeled if non organic
1 avocado, diced
1 cup grape tomatoes, sliced in half
1/2 cup red onion, sliced thinly
3 tablespoons rice wine vinegar
1 tablespoon honey
1 tablespoon apple cider vinegar
1/2 teaspoon black pepper
1/2 teaspoon creole seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 lemon, juiced
pinch of crushed red pepper flakes

Directions:

Rinse and dry vegetables, diced into about 1/4 inch chunks, place in bowl. Mix seasonings and liquids together, cover veggies with vinaigrette, mix well, refrigerate for about 1 hour to chill or eat at room temperature.
