Day 19: 21 Day Detox with Tuscan Tomato Soup

 
It’s Day 19 and I am about to start doing my happy dance…!

I think this experience has been mind altering…lol..for sure, stomach altering.

The best part about the detox is that I stuck too it! I didn’t quit even when I wanted to throw my juicer out the window!

 
Yep, I got a little tired of drinking juice…but once I started adding cooked veggie based meals, I saw the light…the food light!

Today, I am sharing with you my Tuscan Tomato Soup, which is the easiest soup recipe around!

If you have tomatoes, onion, and garlic, you can make this soup! I added a little broth and half and half…if you don’t want dairy, omit the half and half and increase the broth.

It’s simple, flavorful and goes perfectly with a grilled cheese sandwich!

Day 19: 21 Day Detox with Tuscan Tomato Soup

Prep Time: 10 minutesCook Time: 30 minutesTotal Time: 40 minutesServings: 4

Ingredients:

1 28 oz can of crushed tomatoes
3 tablespoon tomato paste
1 teaspoon creole seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon oregano
1/2 teaspoon chili powder
1/2 teaspoon black pepper   
1 c. chicken broth, low sodium
1/4 cup half and half or low fat milk
1 stalk celery, chopped
1 white onion, chopped
3 cloves garlic, chopped
2 tablespoons chopped Italian parsley 
1 Serrano pepper, seeded, chopped, optional 
extra virgin olive oil 

Toppings: green onions, parmigiano reggiano, goat cheese, croutons
 

Directions:

Mix seasoning blend and set aside. 

Chop vegetables and set aside. In a large stock pot add 3 tablespoonful of olive oil over medium heat.

Add vegetables and saute for a few minutes. Add tomato paste and saute for a few minutes.

Add seasonings and mix well. Add crushed tomatoes and broth, mix well.

Reduce heat to medium low and cook soup uncovered for about 30 minutes, stirring occasionally. Add more broth if needed to thin soup.

Remove soup from heat allow to cool for about 10 minutes, soup can be pureed at this time or left chunky. Stir in half and half.

Top with cheese, green onions and croutons.
