Day 4: 21 Day Detox Spicy Thai Broccoli Stir Fry

People…we have cooked food!

Yes, it’s Day 4 of the 21 Day Detox and I decided you and I, just might want some cooked food!

Now you don’t have to make this dish cooked, you could eat it raw and drizzle the spicy chili oil over the uncooked broccoli.

The choice is up to you…I choose to cook!

Let me give you a little background on me…I run the Creole Contessa blog…umm….don’t hold that against me…I am Creole, it is what it is…which equals lots of cooking, eating, and flavor!

Back to me…lol…well, I went meatless for about 7, or it could of been 5 years…who knows, it was a long…long…time!

Anyways…that required me to learn how to recook, not only recook, I had to cook two different meals every time I ate with my family.

Thanks to Indian, Greek and Asian food…I ate and cooked really well.

 
That leads me to today, I can cook veggies and make them taste like meat…yes…I said that…it’s a far cry from yesterday when I said my Tropical smoothie, did NOT taste like a milkshake…lol…

Let me re-speak/write what I meant about meatveggies (doesn’t exist, but a good idea)…lol, o.k. not meat meat, but I would say it’s so full of flavor, you want miss the meat…that’s a better assessment of my veggieisims…(not sure if this is a real word)

I also can take one dish and turn it into two, which I did often when I was meatless and  my Spicy Thai Broccoli Stir Fry was one of my favorite dishes to cook and eat.

Spicy Thai Broccoli Stir Fry

Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes
Servings: 2

Ingredients:

1 large broccoli floret
1/2 cup grated carrots
1 clove garlic, minced
1/4 cup vegetable stock
1/2 tablespoon sriracha
1/2 tablespoon Thai red chili paste
1/2 teaspoon sesame oil
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon creole seasonings
extra virgin olive oil
pinch of crushed red pepper
hot rice or noodles (optional)
crushed peanuts (optional)

Directions:

Mix seasoning blend together and set aside.

Mix chili paste, sauce, and sesame oil together and set aside.

Rinse broccoli, cut into florets, bite sized, slice up some of the stem, and set aside

In a medium pan add about 1 tablespoon olive oil over medium high heat, add carrots and garlic, saute 1 minute.

Add broccoli, mix well, season with remaining seasoning blend, reduce heat to medium low, mix well, add broth, cover with lid and steam for about 2 minutes.

Remove lid from broccoli, add chili oil mixture, stir and mix well.

Serve over rice, noodles or eat just like this.

Sprinkle crushed red pepper and peanuts if desired.

    Made this as part of our Lenten diet. I did use Thai Sweet Chili Sauce since I didn’t have chili paste. That said, it was quite tasty and the peanuts are a must. Served over a small amount of basmati rice. Yummy
