Roasted Veggie Pizza

I love pizza, it’s one of those foods that you can make as healthy, or as fattening as you like.

And yes, sometimes I want it full of fat! 

Today, I making pizza for my daughter. She never eats lunch at school because she thinks it’s completely gross!

Last week she told me her friend opened her fruit cup and it was full of mold.

My daughter stated her friend actually thought the mold was pulp, until my daughter knocked the cup out of her hand to prevent her from eating it!

So I create things like pizza for the week and we make all different types, but veggie is her favorite!

This pizza is so simple to create, with the help of store bought dough and sauce.

This is a 30 minute or less meal.

All baked and ready to pack up in tomorrows lunch! 
Oh, I must mention, this freezes very well.

Roasted Veggie Pizza

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

Ingredients:

1 Pillsbury Pizza dough
2 cups broccoli
1 head spinach
6 stalks asparagus, cut into pieces
1 cup pizza sauce
1 cup mozzarella cheese, grated
1/2 cup parmigiano reggiano cheese, grated
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon oregano, crushed, dried
pinch of crushed red pepper
extra virgin olive oil

Directions:

Preheat oven to broil.

Wash vegetables well, remove tough stem off asparagus, cut broccoli into florets and remove stem from spinach. Dry completely.

 Place vegetables on a baking sheet, coat with a drizzle of olive oil and spices, roast about 10 minutes.

Remove from oven and set aside.

Lower heat according to pizza dough directions.

Place dough onto greased cookie sheet, top with pizza sauce, all the mozzarella, half the parmigiano reggiano cheese and all the vegetables.

Bake pizza according to package directions, around 20 minutes.

Remove from oven and immediately top with remaining parmigiano reggiano cheese.

Slice and enjoy!
