Goat Cheese Flatbread Pizzas with Sauteed Asparagus Spears

It’s pizza time again! I think I probably make pizza about 3-4 times a week. I find that for those of us trying to eat meatless, pizza is our friend.

You can load it up with all types of veggies and have a quick, healthy, meal in minutes.

Today, it’s all about goat cheese and asparagus.  If you don’t like goat cheese, try replacing it with mozzarella or fontina cheese.

I love pretty much all cheeses so I don’t have that problem.

Remove the tough ends off the asparagus and saute for about 5 minutes in a little olive oil.

Assemble pizza and bake for about 15 minutes.

Remove pizza from oven and immediately grate parmigiano reggiano cheese and sprinkle some crushed red pepper on top!

I cut my pizza up into little wedges, if you prefer, you can just roll the whole pizza up and eat it like a sandwich!

Hot, cheesy, and healthy, enjoy!
