Marinated Goat Cheese

Marinated cheeses is one of my favorite things to eat and make.

I love to take mozzarella balls and marinate them in olive oil and vinegar with a few spices to kick them up.

Today, I am taking goat cheese, which by the way is my daughter’s favorite cheese.

The marinade I am using today consists of extra virgin olive oil, rice wine vinegar, a pinch of crushed red pepper and black pepper. 

I added some grape tomatoes for good measure.

You don’t have to use them, but I figured why not turn it into a little salad with the addition of tomatoes. 

I sprinkled a little green onion on top, covered and refrigerated for about 3 hours. Overnight is best, but I couldn’t wait that long.

Don’t forget the water crackers and sliced baguette bread!

Marinated Goat Cheese

Prep Time: 5 minutes
Servings: 4

Ingredients:

5 ounces soft goat cheese
1/2 cup extra virgin olive oil
1/4 cup rice wine vinegar
1/4 cup grape tomatoes, diced
pinch of pepper
pinch of crushed red pepper
1 green onion, sliced

Directions:

Mix oil and vinegar together whisking well. Season with pepper and crushed red peppers, add tomatoes and pour over goat cheese. Add sliced green onion.

Cover and refrigerate for at least 3 hours, preferably overnight. Enjoy with crackers and sliced baguettes.
