Cheesy Spinach Asparagus Dip

 
I love spinach artichoke dip! 
I also love veggies so I wanted to take my traditional spinach artichoke dip and use asparagus, instead of artichokes. 

If you want to still include artichokes this dip would still turn out great, the more veggies the better. 

I started out by cutting the tips off the asparagus to use as a garnish, you don’t have to do that, you can just remove the tough stems off the asparagus and saute the remaining asparagus.

I wanted to make the top of the dip pretty for pictures. 

Next, I sauteed the spinach and cooked everything until tender. 

Allow the veggie mixture to cool slightly and fold in the all the cheeses, mayo, and creams.

Transfer everything to a greased casserole dish and bake until bubbly!

Don’t forget to garnish the top with the asparagus tips before baking, also drizzle with a little olive oil. 

All done and ready to eat!

This dip is so cheesy and it’s full of veggies so it’s almost 100% healthy, o.k. not really, but it’s still packed with all things green!

I served this dip with my favorite Garden of Eatin’ chips, which by the way, I am addicted to all their flavors.

Cheesy Spinach Asparagus Dip

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Servings:  4-6

Ingredients:

1 lb spinach, chopped
1 lb asparagus spears
1 onion, diced
1 bell pepper, diced
1 jalapeno, minced
3 cloves garlic, minced
1 cup jack cheese, grated
1 cup cheddar cheese, grated
1/2 cup parmesean cheese, grated
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup cream cheese
1 teaspoon black pepper
1/2 teaspoon creole seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
extra virgin olive oil

Directions:

Preheat oven to 375 degrees.

Rinse spinach and asparagus, drain and set aside.

Remove about 1 inch of hard steam from bottom of asparagus spears, discard. Cut tips off asparagus and set aside to garnish the top of dip.

Dice remaining asparagus tips into bite size pieces.

In a large skillet over medium high heat add about 2 tablespoons of olive oil, add onion, bell pepper and jalapeno, saute about 5 minutes, season with 1 teaspoon of seasoning blend. Add garlic and cook 1 minute more.

Add asparagus and spinach, season with 1 teaspoon of seasoning blend and cook until tender about 10 minutes taste for flavor, add more seasonings if needed, allow to cool slightly.

In a large bowl add cheeses, mayo, sour cream, and cream cheese, mix well, season with 1 teaspoon of seasoning blend.

Mix cheese blend with veggies and transfer to a greased casserole dish.

Garnish with asparagus tips, drizzle with a little olive oil and bake at 375 degrees for about 15-20 minutes, or until cheese is bubbly.

Broil dish for about 5 minutes if desired to brown asparagus tips.

Serve with crusty bread, chips, crackers.
