I am sure most of you have heard about the miracle cabbage soup diet.
Well, I don’t look at cabbage soup as diet food.
I look at it as a wonderful veggie soup that fills me up and just happens to help me shed a few pounds in the process.
I wanted to take my love of not only cabbage soup, but my love of tortilla soup and add the two recipes and turn them into one wonderful, filling, fat blasting soup!
All you do is throw everything into a large soup pot, bring to boil, then simmer until all the veggies are tender.
I eat this soup for lunch and dinner and sometimes with a side salad.
Yes, veggie overload.
If you prefer you can puree the soup or just leave it chunky!
Don’t forget to top with your favorite baked tortilla chips.
Fat Burning Cabbage Tortilla Soup
Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time: 35 minutes
8 cups vegetable broth or chicken broth, low sodium
2 cups red salsa
2 cups green salsa verde
1 head cabbage, shredded
3 carrots, diced
1 red onion, diced
3 cloves garlic, minced
1 bell pepper, diced
1/2 cup cilantro, diced
2 limes, juiced
1 teaspoon black pepper
1 teaspoon chili powder
1 teaspoon onion powder
1 teaspoon oregano, dried, crushed
baked tortilla chips to garnish
Add all ingredients to large soup pot. Bring mixture to boil, cover, reduce heat and simmer until all vegetables are tender.
If desired puree vegetable mixture for smoother soup.
Serve with baked tortilla chips.
Update: I forgot to note that often when I make this, I will add all the vegetables except the cabbage and cook until tender then puree the veggie mixture. Add back to the pot then add cabbage and cook until tender. It’s up to your personal preference. And don’t be afraid to add more stock to thin soup to your desired taste.
